Rice:
A Common Haitian Dish 1. Pour oil in large saucepan. Heat over medium heat, then add the chopped onion, pepper, celery, cayenne pepper, black pepper, and thyme. Cook for about 5 minutes; stir every 30 seconds so the vegetables do not stick. 2.Add ham and sausage to the saucepan. Cook for 5 minutes; stir every 30 seconds. 3.Add beans and their liquid, bay leaves, and garlic. Cook over medium-low heat, uncovered, for about 45 minutes. Stir occasionally. After the mixture has cooked, it occasionally. After the mixture has cooked, it should look like a thick soap or stew. 4.While the beans cook, prepare the rice in a medium saucepan according to package directions. 5.When the rice is done, remove and discard the bay leaves from the bean mixture.
